A good roar is half the battle: Michael Kolm, award-winning chef at KOLM, knows how to showcase himself and his culinary skills in the north of Lower Austria. A seasoned Waldviertel native who represents his region in culinary terms far beyond its borders. He boldly presents it to the outside world, but is not afraid to incorporate international influences. "Waldviertel seasoned with the world" - a motto that sums up his cooking philosophy. Surrounded by meadows and fields, the award-winning restaurant is perfectly embedded in the landscape. The region's Celtic past becomes the present in the form of the newly interpreted Feuerfleck: a flatbread made from yeast dough and filled with tuna and gammel.
